Sausage and carrot sauce for pasta

8oz /225g italian sausage
1 tbs cooking oil
15g butter
1/2 medium onion chopped finely
3 medium carrots, grated
14oz /397g can tomatoes, pureed
4 floz 110 ml chicken or beef stock
1 bay leaf
1 tsp dried oregano
12oz 350g pasta
3 oz/75g parmesan, grated
salt andpepper

skin sausages and remove meat. Heat oil and butter in pan and cook onion until translucent. Add the sausage meat and lightly brown, breaking up with a fork. Add the carrots and stir for a few minutes. Add tomatoes, stock, bay leaf and oregano and cook covered over low heat for 30 minutes.

Taste for seasoning, you may not need any if the sausages are spicy.

Cook and drain pasta, pour into warm serving dish, mix with sauce, reheat if necessary, serve with parmesan separately.
