1lb pork
2-3 tbs soy sauce
1/2 tsp cornflour
2 peppers, 1 red and 1 green
2 carrots
1 onion
2 slices of pineapple - tinned is fine
1.5 tbs of soy sauce
2 tbs sugar
1 tbs sherry
2 tbs vinegar
2 tbs tomato sauce
cornflour, mixed with water (about 2tbs)
4tbs oil for the frying.
If battering the pork then use:
6oz plain flour
1/2 tsp salt
2 tbs oil
7 floz water
2 eggs
Halve the onion, peel and then cut each half into thirds, lengthwise (from root to tip). Chop the thirds in half crosswise - don't make them too small
Cut peppers into similarly sized chunks.
Cut carrots into thinnish slices, on a par with the onions/peppers.
Drain pineapple, reserving juice.
Cut pork into 2cm pieces, mix 2-3 tbs soy sauce with 1/2 tsp cornflour and marinate pork in it.
Mix sauce ingredients.
