(Sausage and Carrot pasta)
Ingredients
225g good pork sausages/sausagemeat (if you can get Italian with fennel then so much the better)
1 tbs cooking oil
15 g butter
1/2 medium onion, chopped finely
3 medium carrots, grated
400g can tomatoes, squished by hand
110 ml chicken or similar stock
1 bay leaf
1 tsp dried oregano
350g macaroni or other dried pasta
75g freshly grated parmesan or other cheese
salt and pepper
Method
Skin the sausages if using. Heat the oil and butter in a pan and cook onion until translucent. Add the sausagemeat and lightly brown, breaking it up with a fork. Add the carrots and stir for a minutes. Add the tomatoes, stock, bay leaf, oregano and cook covered over low heat for 30 minutes. Taste for seasoning.
Cook and drain the pasta mix in the pasta and parmesan served separately.
