Garlic Cheddar Biscuits

Garlic- Cheddar Biscuits
2 1/2 C self-rising flour (310g)
2 tsp sugar
1/2 C + 3 TBS cold butter (110g + 45g)
1 C buttermilk (240ml)
1 tsp onion powder
1 C fresh grated mild cheddar cheese (120g)
1 TBS fresh chive (chopped)
1 TBS minced garlic
1/4 tsp garlic powder
1/4 tsp dried parsley

Preparation

1. Preheat oven to 230C.
2. In a large bowl shift in flour and then add sugar and onion powder. Whisk together to combine.
3. Next cut 110g of cold butter into small cubes. Add to bowl and using a pastry cutter (or fork) cut butter into flour mixture until well incorporated and flour takes on lite granulated texture.
4. Add grated cheddar and chives to bowl and whisk together.
5. Add minced garlic and buttermilk to bowl and mix in well and combine to form uniform ball of dough. Do not use mixer or over knead.
6. Next, flour clean surface and roll out dough into about 1/2 inch thick sheet. Using a 2 1/2 inch cutter. Cut out biscuits and place on a greased pan.
7. Place biscuits in over and back for 12 minutes.
8. In a small bowl melt 45g butter and add garlic powder and dried parsley. Mix together.
9. Once you remove biscuits from oven brush tops of biscuits with garlic butter mixture.
10. Serve warm.
