Aioli and variations

 300ml mayonnaise

1 head of garlic

Olive oil


Slice off top of garlic, cutting through the cloves.  Place cut-side up in oven tray, drizzle over olive oil and season.  Preheat oven to 150C.  Roast garlic until completely soft, approximately 1 hour.  Leave to cool and squeeze out cloves from the skins, mix into the mayonnaise

Roast red pepper - chargrill 2 red peppers, peel and seed, blend until smooth, mix into mayonnaise

Chilli lime - 1 finely chopped green chilli, seeded, 1 tbs finely chopped coriander, 1 tbs lime juice, mix into mayonnaise
