Thai Red Squid Curry

 Serves 2

3 medium size squid 

2 long beans or 4 green beans

2 Thai red chilies

1.5 tbs oil

0.5 tbs red curry paste

3 kaffir lime leaves

1 tbs fish sauce

2 tbs oyster sauce

0.5 tsp sugar

2 tbs water


Wash and cut squid into bite sized pieces.  Cut long beans and slice chillies, leave together


Heat wok on med-high heat and add oil.  Add red curry paste, stir to release the aroma, <1 minute.  Add squid and stir fry ~ 1 minute.  

Add fish sauce, oyster sauce, sugar and a little water if needed and mix well

Add beans and chili, stir fry 1 more minute.  Taste and adjust sauces, sugar, water to suit
