Paprika pork chops

4 pork chops 1-1 1/2 inches thick
1/4 cup/60 mL paprika
1 teaspoon/5 mL sea salt
1/2 teaspoon/2.5 mL ground ginger
1/2 teaspoon/2.5 mL dry mustard
1/2 teaspoon/2.5 mL ground black pepper
1 clove garlic minced
1 tablespoon/15 mL soy sauce


01 Preheat the grill.  Mix paprika, salt, ginger, mustard, pepper and garlic in a bowl.
02 Trim fat from chops and brush with soy sauce.
03 Pat pork chops with spice mixture on both sides.
04 Grill over high heat until meat near the bone is no longer pink (about 10-15minutes with an internal temperature of 140 F/60 C), turning halfway through cooking time.
05 Remove from grill, cover, and allow to rest for 5 minutes before serving
