Orzo pasta salad

2 peppers of your choice
2 red onions
cherry tomatoes
courgette (optional)
chilli pepper (optional)
250g dried orzo
basil or other fresh herbs such as parsley, coriander
packet feta cheese
olive oil
s&p
splash balsamic vinegar

Drizzle peppers, onions and courgette with oil in baking tray and roast for 20-25 mins at 200C. Add halved cherry tomatoes and roast for another 5-10 mins

cook orzo ~ 9-10 mins.  Rinse in cold water to cool.

Combine veg, pasta, feta, herbs and more olive oil.  Season to taste.  Add splash balsamic or other vinegar if you fancy it.
