800 g pork, leg preferably cut into 2cm cubes
Marinade:
1 tablespoon dried mint
1 tablespoon dried oregano
juice of 1 lemon
100 ml good-quality olive oil
2 cloves garlic, peeled and finely grated
1 tablespoon red wine vinegar
1 pinch freshly ground black pepper
1 pinch sea salt
Just let it do its business for a good few hours!
