Smoked Salmon Sushi

serves 4 as snack

250g sushi rice
2tbs rice wine vinegar
1tbs mirin
1tsp sugar
4 sheets nori
150g smoked salmon
1 bunch chives

Put rice in small pan with 325ml water. Bring to boil and simmer, covered for 10 minutes. Remove from heat, leave the lid on and allow to sit for 10 to 15 minutes.

Transfer to large bowl, add vinegar, mirin and sugar. Mix again and continue to mix until cool (?????? this sounds a bit too aggressive)

Lay nori sheets on dry surface and divide the rice between them, spreading evenly with fingers and patting flat. Dip fingers in cold water to prevent sticking.

Place salmon evenly over two of the sheets, arrange an even layer of chives over the top and then sandwich with the other sheets of nori.

Pat sandwich together and push edges straight with the flat of a knife. Cut in half and then cut each half into three fingers.
