Apple Shortcake (Edmonds)

225g 8oz flour
1 tsp baking powder
125g 4oz butter
1 egg
1 dssp sugar
3 apples
milk (about 2 tbs)

Rub butter into sifted flour and baking powder. Beat egg and sugar together, mix into flour to a light paste with a little milk. Cut in half, roll out one piece and place on tray. Cover with sliced apples, sprinkle with sugar, place other half on top, cover and brush over with milk.

Bake 20-30 mins at 180C 350F. Sprinkle with icing sugar and cut while hot.
