Makes about 2/3 cup
1/2 cup white wine
1/4 cup water
1 tbs capers, coarsely chopped
4 tbs unsalted butter, chilled and cut into small pieces
1 tsp chopped fresh parsley

Reduce wine to 1/4 cup over high heat. Add water and reduce again to 1/3 cup. Add capers and whisk in butter pieces a few at a time. When all butter has been added remove from heat and whisk in remaining ingredients, plus 1/2 tsp caper juice.
