This is an amalgamation of several recipes I looked at online - I can't remember the recipe in my Moroccan cookbook (it's back at home in Denstone), but I seem to recall that the tomatoes were thinly sliced rather than concasse - I'm not trying to make salsa here.
Tomatoes, home-grown by Brandon and thinly sliced
Onion, sliced waffer thin in whole rings, separated
Parsley
Mint
Cumin seeds, pan-roasted
Cayenne pepper
Olive oil
Lemon juice
S&P
Layer up in the order that the ingredients are listed. Use your skill and judgement for quantities.
I'll let you know what it tasted like - but Brandon's tomatoes were perfect just by themselves. This could be a case of gilding the lily.
